Happy Friday! This week has been crahaaazy busy, in a good way though! But I’m resurfacing and looking forward to the weekend!
It’s in the 80s here now and I’m absolutely loving the heat. I will take hot and humid over cold and snowy any day, any time. Since things have gotten hectic this week, my eats have been super simple and super fast. Which, quite honestly, is how it works for me 80% of the time. Like most of you, I just don’t have time to be cooking up recipes and making meals look pretty. Although I will gladly peruse the blogosphere and gawk at everyone else’s pretty breakfasts and lunches and dinners as I drool all over my keyboard.
But, being busy doesn’t mean you can’t eat healthy right? Right.
I’ve been all about overnight oats for breakfast this week. Make ’em the night before and all you have to do is grab from the fridge in the morning and you’re off.
Even better if they’re in an almost empty PB jar! My favorite combo is 1/2 cup each of oats, non-dairy yogurt, and almond milk plus cinnamon, vanilla, and any fruit you like!
Some of my favorite topping are crumbled muffins, cereal, or granola! [up above]
Lunches have been a rotation of salads + wraps! Hummus is my go-to and when things get busy, I usually stick with the same thing and just roll with it. I ate this lunch pretty much all week and haven’t gotten sick of it yet. Hummus wrap + salad + fruit + crackers and guac. And I love the chew of Ezekial wraps!
And lazy girl dinners that come together in about 5 minutes have been a staple…
Sauteed brocolli, peppers, onions, carrots, and zucchini with Bragg’s liquid aminos [or soy sauce] and a whole lotta hummus with a couple Ezekial wraps. I ate this a couple nights and a couple nights I pulled a Dr. Praeger burger from the freezer, microwaved a sweet potato + corn on the cob, and made some kale chips in the oven.
Super simple, but still healthy. I’ll take it!
And with the temps rising and summer coming, my body starts to crave salads and smoothies and cold stuff all the time. But I think the secret to a good salad is a good dressing! Bottled dressings will work in a pinch but homemade dressings are so much better and so, so easy to make!
This tomato basil dressing has been my jam over the past few weeks. I can only imagine how good it will be when tomatoes are at their peak in August. Give it a try this weekend, I hope you like it just as much as I do!
Tomato Basil Dressing [makes 3/4 cup]
1/2 cup of cherry tomatoes [or chopped tomatoes]
1/2 tablespoon olive oil
1/2 tablespoon apple cider vinegar
1/2 tablespoon agave
1/2 teaspoon dried basil
1/4 teaspoon sea salt
1 clove garlic
Put all your ingredients in the food processor, or blender, or magic bullet in this case and blend away!
